Chicken with Green Olives
This recipe is for 4 you can double the ingredients for 8 etc.
3 tb olive oil
2 tb butter
4 chicken breasts, part boned
1 large onion, finely chopped
2 garlic cloves, crushed
2 red, yellow, or green bell peppers, cored, seeded and cut into large pieces
9 ounces button mushrooms sliced
6 ounces tomatoes, skinned and halved
5/8 cup dry white wine
1-1/2 cups pitted green olives
4 - 6 tb heavy cream
Heat 2 tb of the oil and butter in a skilled. Add the chicken breasts and fry until golden brown. Remove the chicken from the pan.
Add the onion and garlic to the pan and saute over a medium heat until beginning to soften. Add the bell peppers and mushrooms and cook for 2 - 3 minutes. Add the tomatoes and season to taste with salt and pepper. Transfer the vegetables to a casserole and arrange the chicken on top.
Add the wine to the pan and bring to a boil. Pour the wine over the chicken. Cover and cook in a preheated oven at 350 for 50 minutes.
Add the olives to the casserole and mix in until well combined. pour in the cream cover and return to the oven for 10 - 20 minutes.
Sausage & Peppers
4 - 6 Sweet Italian Sausages
2 medium or 1 large vidalia onions
4 - 5 red peppers (or you can use mixed peppers) cut into strips and seeds removed.
1 large can of plum tomatoes
olive oil
Cut the sausage into small rounds and place in large 8 1/2 x 14" pan.
Cut the onions lengthwise and put in pan
Place the peppers in the pan with the sausage and onions and mix together
Take the can of plum tomatoes and crush them with your hands then place over the sausage and pepper mix.
add salt and pepper (not too much ) drizzle a good olive oil over the top and cover with aluminum foil
Bake at 350 for at least one hour (I usually bake for 1 1/2 hours)
Then remove the aluminum and bake more until sausage is done.
This is so easy and very very good!
